About this wine
C.Kloss has made Sekt and sparkling wine in Winningen on the Mosel since 1856. The Sparkling Coffee is their most unusual creation: a non-alcoholic, unfiltered sparkling beverage made entirely from fermented coffee, inspired by the coffee kombucha recipe developed at Noma in Copenhagen. The coffee is fermented using a kombucha culture, developing a lively acidity and a layered flavour profile that balances roasted coffee bitterness with the brightness of fermentation. No alcohol, no artificial additives — just coffee, fermented and carbonated.
Tasting notes
Deep amber, naturally cloudy and unfiltered. The nose is unmistakably coffee — roasted, slightly bitter, with a bright citrus-edged fermentation note underneath. On the palate, light carbonation carries bold coffee character, clean lactic tartness, and a long bittersweet finish. Surprising, refreshing, and genuinely different from anything else in the glass.

Noma's fermented coffee put the idea on the map. C.Kloss took it and made it a proper bottled drink: fermented coffee, carbonated, unfiltered, zero alcohol.
