About this wine
If Defaix has a signature, it is this Vieilles Vignes — vines averaging 45 years, the oldest planted in 1900, on the Upper Jurassic Kimmeridgian marl shot through with the tiny fossilised oysters that give Chablis its salinity. The family has farmed these slopes since 1610, father to son, and their slow, patient method shows here: têtes de cuvées only at pressing, three weeks of natural-yeast fermentation at 18°C, full malolactic, twelve months on fine lees with monthly bâtonnage. A village Chablis with the complexity of a Premier Cru — Gold at the 2018 and 2026 Burgondia, the 2018 Tastevinage, and Gold at the 2026 Feminalise.
Tasting notes
Pale yellow with green reflections. The nose is bright and saline — citrus, white peach, that unmistakable Chablis breath of oyster shell and gunflint. The palate is vivid and mineral, with the depth old vines give and a long, persistent finish. The classic Defaix aperitif: oysters, seafood platters, snails à la bourguignonne, jambon persillé and the famous andouillette de Chablis tirée à la ficelle.
