About this wine
Vaillon is the most famous of the historical Chablis Premier Crus — and the one Asian chefs reach for. The soil is rich in iron, giving the wine real fruit, real flesh and a spicy edge that builds with age. The Defaix family has worked Chablis vineyards since 1610, father to son; this south-east facing slope of 28% gradient was once the land of the seigneurs de Noyers, with vines averaging 42 years. Production is capped at 30% of the domain's premier cru output. Têtes de cuvées only at pressing, three weeks of natural-yeast fermentation at 18°C, full malolactic, eighteen months on fine lees with monthly bâtonnage. Tastevinage du Château de Clos Vougeot in 2014 and 2013, Major in 2005 — and Gold at the 2026 Burgondia and the 2026 Feminalise.
Tasting notes
Pale yellow with golden glints. The nose is open and friendly: yellow fruit, citrus peel, white pepper, a hint of toasted hazelnut. The palate is full-bodied and round, with the iron-rich soil pushing a spicy thread through the centre that lengthens with bottle age. A Chablis that loves bold flavours — Mediterranean fish and the majority of Asian dishes.
