About this wine
One of the three historical Chablis Premier Crus farmed by the Defaix family since 1610, Les Lys sits south-east facing on vines averaging 41 years old. What makes this cuvée singular is the marl underneath — argilo-calcaire so dense it asphyxiates the soil, starving the Chardonnay of oxygen and forcing it to reach instead for white flowers, vertical minerality and an omnipresent salinity. Production is capped at 20% of the domain's premier cru output, the smallest of the three historical cuvées. Têtes de cuvées only, natural-yeast fermentation at 18°C for three weeks, full malolactic, then eighteen months on fine lees with monthly bâtonnage. Gold at the 2026 Concours Mondial des Feminalise and the 2026 Burgondia.
Tasting notes
Pale yellow with green-gold glints. The nose lifts on white flowers — broom, acacia, lily of the valley — then a clean, almost saline minerality. The palate is vertical and taut, with a salty thread running from attack to finish and a long, mineral close. The Chablis to keep for Atlantic fish, spiny lobster, turbot and scallops.
