About this wine

Blanchot is the easternmost of Chablis' seven Grand Cru vineyards, facing south-east — the site that produces the most refined and delicately aromatic of the Grands Crus. Defaix owns 0.15 hectares, a plot so small it barely fills a tank. Vines planted 1986 on pure Kimméridgian marl. Natural yeasts, complete malolactic fermentation, 18 months of monthly lees stirring, no oak, unfiltered. The 2014 is now 12 years old and fully open: white flowers on the nose, honey and farmhouse butter on the palate, and the pierre à fusil — struck flint — that is the signature of mature Grand Cru Chablis.

Tasting notes

Deep gold, shimmering. The nose unfolds slowly: white flowers, linden blossom, farmhouse butter, and honey, followed by the unmistakable struck-flint minerality of mature Grand Cru Chablis. On the palate, silky in structure, generous and layered, with citrus and mineral notes that extend through a long, precise finish. At or near peak.

100% Chardonnay from the Blanchot Grand Cru (0.15 ha, vines planted 1986, SE exposure, Kimméridgian marl); natural yeast fermentation at 18°C; complete MLF; 18 months monthly bâtonnage in stainless steel. No oak, unfined, unfiltered.
