About this wine
Blanchot is the most floral of the seven Chablis Grand Crus — south-east facing on the eastern flank of the famous hillside, with a tight, very limited production. The Defaix family has worked these slopes since 1610, father to son, and their parcel was replanted in 1986 on the pure Kimmeridgian marl that is Chablis's signature. Têtes de cuvées only at pressing, three weeks of natural-yeast fermentation at 18°C, full malolactic, then eighteen months on fine lees with monthly bâtonnage — the slow, patient method the domain has held to for generations, building the gras and enzymatic depth for decades of life in bottle.
Tasting notes
Pale gold with greenish glints. The nose carries white flowers, broom, lime blossom, then drifts into honey, farmer's butter and gunflint minerality. The palate is silky and seductive from first sip, with a complete, beautifully balanced body. Save it for delicate plates — turbot with hollandaise sauce, line-caught sea bass, sole normande, pan-seared scallops.
