About this wine
One of just five owners of Les Grenouilles, the smallest Grand Cru in Chablis — a tight dome of vines mocking the frogs of the valley below who can never climb that high. The Defaix family has worked Chablis vineyards since 1610, father to son, and on this fully south-facing crown of rock their 1960-planted vines push long roots into the Kimmeridgian marl. Whole-bunch press, only the têtes de cuvées kept, three weeks of natural-yeast fermentation at 18°C, full malolactic, then eighteen months on fine lees with monthly bâtonnage to build the gras and the enzymatic spine for a long ageing. The mythical wine of the domain — rich, round, silky in structure, delicately bouqueted.
Tasting notes
Pale gold with green-tinged reflections. The nose moves between white flower, honey, beeswax and gunflint. The palate is unmistakably sensual — fleshy and rounded, then drawn upward by the salinity that only Grenouilles can summon. A finish that holds for half a minute. Splendid with oscietra caviar, lobster, or simply as an aperitif worth lingering over.
