Why it's on our shelf
Defaix owns 0.15 hectares of Blanchot — a plot so small it barely fills the tank in any vintage. Vines planted 1986, 12 years of bottle age, no oak, unfiltered. The nose is white flowers and linden, then honey and farmhouse butter, then struck flint — the pierre à fusil of mature Grand Cru Chablis. A silky palate, a long finish. A Grand Cru that earns the designation.
