Start light, save the big stuff
The apéro sets the tone — it doesn't have to be the star. Something crisp and lower in alcohol keeps everyone fresh for the meal that follows.
Bubbles are never wrong
A glass of something sparkling makes any moment feel a little more deliberate. It's the safest apéro reflex there is.
Chill it more than you think
Apéro wines show best properly cold — colder than you'd pour them at the table. Straight from the fridge is right; an ice bucket is better.
