Choosing a red wine
Start with weight
Pinot Noir and other lighter reds suit delicate food; fuller reds handle richer dishes. Start with the meal or moment, not a famous label.
Serve it slightly cool
Most red wine tastes fresher a little below room temperature. Fifteen minutes in the fridge is often enough for a bottle that feels too warm.
Name a grape you already like
If you know you enjoy Pinot Noir, Malbec or Cabernet, say so. It is the fastest way for the sommelier to find a nearby style in the current range.
